Hey, It's Nic, Molly Rose Founder & Brewer, with an exciting update. Making and serving Molly Rose beer has been one of the great honours of my life, and outside of getting my children to belly laugh, watching the satisfaction on the face of a guest after taking their first sip of one of our beers makes me happier than anything else in the world.
Creating moments where someone feels like they’re exactly where they’re meant to be, and has permission to enjoy a small indulgence, is pretty special. Being able to do it alongside a room full of people doing the same is magic. It’s that local pub feeling we’ve always tried to create at Molly Rose.
From our first pints in the taproom in 2019 to lockdown roller door pop-ups and chef’s table dinners, the goal has always been the same: make everyone feel welcome. Our relaunch in March was all about letting everyone know that we are still around, making great beers and serving them alongside food that is great with beer. It was awesome to see groups of people (old and new MR friends) coming back into the venue and getting involved in the Molly Rose of 2026.
After serving and chatting with guests about our new food menu and ‘loosening of the collar’, we knew we were on the right track. But over happy hour pints, trivia nights, steak nights and long afternoons in the beer garden, a few themes kept coming up. People loved the hospitality and the beer, but wanted the venue to feel warmer, more relaxed and more like the taproom of old.
So, in true Molly Rose fashion, we decided to test an idea.
Throughout May we ran Pizza Fridays with Porco Ciccio. The vibes were great, the service felt natural, the beers were flowing and the room had an energy that immediately felt right. After a few weeks it became obvious that our beer, our venue and our style of hospitality pair beautifully with pizza.
More importantly, it felt like the Molly Rose we've been trying to create for a long time.
It was probably obvious to many of you before it was to us, but adding pizza to the list of things Molly Rose brews, distils, makes and ferments was the logical next step.
So now we're fermenting one extra thing on Wellington Street.
As of tonight, Wednesday 10.06.26, pizza becomes part of Molly Rose properly, alongside some old favourites and a few complementary dishes. The goal is the same as it has always been: make it easy to drop into Molly Rose for a pint, catch up with friends and enjoy delicious food in a fun, warm and welcoming neighbourhood beer hall.
